Epic Deep Dish

Pick this if you want thick Detroit style pan pizza with crispy cheese edges. Cheese and toppings go straight on the dough with no sauce, and the sauce goes on in stripes after it comes out. It needs one extra hour of rest once it is stretched into the pan, so plan a little more time.

Outdoor Grilling

Pick this if you cook outside. The dough goes directly on hot grill grates, not on a pan. You grill one side, flip it, then top the grilled side and finish it. Fastest bake of the four at 6 to 8 minutes, but have every topping prepped before you start because it moves quickly.

Gluten Free

Pick this if you need gluten free. It is free of all Big 9 allergens. This is the one that behaves differently: it takes olive oil as well as water, needs a stand mixer with a paddle attachment, and gets pressed between two sheets of parchment instead of tossed. It also gets par-baked for 6 minutes before toppings go on.

Which dough is easiest for a beginner?

Neapolitan. It is the most forgiving, needs the least equipment, and the technique is the most familiar. Deep dish is a close second since it is pressed into a pan rather than stretched by hand.

Which one is fastest?

Outdoor Grilling once the dough is risen, at 6 to 8 minutes on the grate. Gluten Free has the shortest rise at 2 hours, so it is fastest start to finish.

Do I need a pizza stone?

Not required, but it makes a real difference for Neapolitan. A stone or steel gives you the hot surface that crisps the bottom. Deep dish uses pans, grilling uses the grates, and gluten free uses sheet pans, so those three need no stone at all.

What water temperature should I use?

Between 75 and 80 degrees for all of them. Anything over 100 degrees kills the yeast and the dough will not rise. This is the single most common first-timer mistake.

Can I cold ferment any of them?

Yes. Mix with cold water instead of warm and refrigerate the dough balls. 24 hours is good, 48 is better, 72 is best. Time is a flavor in dough making.
