Dessert pizza that eats like tiramisu: a crisp bare crust, sweet mascarpone, Munchkins, an espresso drizzle and a heavy dusting of cocoa. Episode 16 of Will It Slice?
Dunkin Munchkin Pizza Tiramisu

Ingredients

  • 1 dough ball Urban Slicer Neapolitan Style Pizza Dough
  • 8 oz mascarpone, whipped with 3 Tbsp powdered sugar and 1/2 tsp vanilla
  • About 12 Munchkins (glazed and chocolate), broken in half
  • 1 shot espresso (or ΒΌ cup strong coffee), cooled
  • Unsweetened cocoa powder, for dusting

Directions

  1. Make the dough. Mix 1 packet with exactly 1 cup (236g) warm water (75 to 80F). Knead 10 minutes by hand or 8 with a dough hook, form 2 balls and let them rise, covered, 2 to 4 hours.
  2. Stretch and dock. Stretch one ball into a 13 to 14 inch round and poke it all over with a fork so it bakes flat.
  3. Bake it bare. On a preheated stone or steel at 500F for 8 to 10 minutes, or in a pizza oven at 700 to 900F for 2 to 4 minutes, until golden. Let it cool a few minutes.
  4. Mascarpone base. Spread the sweetened mascarpone edge to edge.
  5. Munchkins. Press the halves into the mascarpone. Slice the pizza.
  6. Finish. Drizzle the espresso slowly over the back of a spoon across the whole pie, then dust heavily with cocoa.
